Item Details

A nineteenth century, French wooden duck press. This is marked ”J L DEPOSE” and it dates from c.1890. Duck presses were used to produce a traditional French dish that was a speciality of Rouen. It consists of various parts of a duck served in a sauce of its blood and bone marrow which is extracted by the press. First a young duck is asphyxiated to retain the blood. Then the duck is partially roasted, its liver is ground and seasoned, and the legs and breast are removed. The remaining carcass, skin and meat trimmings are pressed and the resulting juices are thickened and flavoured with the duck’s liver, butter and cognac. This is combined with the breast to finish cooking.
This press has a tin container for the bones to be pressed in. There are a few wood worm holes in the wood but the piece is generally in very good condition and it could still be used.
