These were mostly used in the making of preserves, for skimming the scum which forms on the top of the pan. This example is made from a very heavy gauge of copper and dates from c.1870. The end of the handle is turned, resembling a shepherd’s crook, so that the skimmer can hang when not in use. It is in excellent condition.
