Item Description
A nineteenth century, French wooden duck press with ceramic fittings. Both the ceramic container and the weight are marked ”A M” and this probably relates to the manufacturer. The press dates from c.1880.
Duck presses were used to produce a traditional French dish that was a speciality of Rouen. It consists of various parts of a duck served in a sauce of its blood and bone marrow which is extracted by the press. First a young duck is asphyxiated to retain the blood. Then the duck is partially roasted, its liver is ground and seasoned, and the legs and breast are removed. The remaining carcass, skin and meat trimmings are pressed and the resulting juices are thickened and flavoured with the duck’s liver, butter and cognac. This is combined with the breast to finish cooking.
This press has a lovely, ceramic container and weight for the bones to be pressed in and with. There is some wear to the varnish on the wood and there is a crack in the wooden stand, which can be seen in the images. Otherwise the piece is in very good condition and it could still be used.
